Hi I have some questions:

1. If I want to use Wledpixel on newest ESP32 Wroom 32 (with bluetooth and wifi) And 2712 Matrix (8x64), is there a method to install this code with Arduino IDE Sketch ?
2. I have no experience with platformio, and i prefer to not install... because there are too many versions, and i can't understand what really version I need, I prefer to work with Arduino IDE, if possible... or i must use Platformio, but what version ?

You can use Arduino IDE.

And platformio.ini has the information what libraries is used and what versions of those libraries.
