docs: attribute jsonformer to @1rgs instead of misnamed author#6

README, AUTHORS, and PREPRINT all credited jsonformer to "Nick Kapur" — not the upstream maintainer's actual name. Swap to the GitHub handle @1rgs in all three, which is how they present themselves on the repo. Narrative prose links to the profile; the PREPRINT footnote uses the bare handle in author position.
