docs: show full supported model names

Summary

• Set the supported-models notebook to disable Pandas column-width truncation.
• Updated the stored supported-models output so the two long sentence-transformers/paraphrase-multilingual-* model names render in full on the published docs page.

Validation

• git diff --check HEAD~1..HEAD
• Confirmed the notebook JSON parses after the edit.
• Static search confirmed the full model names are present in the notebook source/output.
• Tests not run locally; docs-only notebook source/output change.
