API Developer Documentation

Here comes the documentation of the whole backend. I will paste the general topics that should be described here and let's hope we find the time to fill these in. This should serve as a starting point for new developers and for us to explain / define some concepts that are used (especially stuff that is not well documented in nestjs docs).
