Updates the root README to align wording with the “Open Workflow Specification” naming and adjusts the dependency snippets shown to consumers of the Java SDK.
Changes:
- Renames the referenced specification from “Serverless Workflow Specification” to “Open Workflow Specification” in the README intro.
- Updates the Maven and Gradle dependency version placeholders in README examples.
