Updates the root docker-compose.yml to build multiple platform tool services from a single platformtools/Dockerfile using multi-stage build targets, aiming to improve Docker build cacheability during docker-compose build.
Changes:
- Switch platform tool services from per-tool Dockerfiles to a shared
platformtools/Dockerfile. - Add
build.targetfor each platform tool service to select the appropriate multi-stage build.
