Add rolling window for gym classes and daily top-up scheduling#49

- Introduced `ensureUpcomingClasses()` to maintain a rolling 30-day window of gym classes. - Added a `@Scheduled` daily job to ensure the window is continuously updated. - Updated `GymClassRepository` to include `findByStartTimeBetween()` method. - Enabled scheduling in `BokaApplication`. - Refactored initial data seeding to delegate gym class creation to the rolling window logic.
