Add npins pins for wine-osu and wine-osu-staging from GitLab, create update script that reads commits from wine-osu-patches, modify wine-osu nix expression to use pinned sources and mono.json, and add the script to the CI update workflow.
Move duplicate mono extraction and VERSION file copy logic from cachyos, tkg, and osu update scripts into update-wine-common.sh, providing extract_mono and install_version functions.

I'll merge this, though I'm not sure if we should keep both wine-osu and proton-osu-bin around. I no longer play osu!stable so I can't comment about which is better. |

This PR adds an update script to wine-osu and extracts the common logic from the Wine update scripts.
