What
pygment 2.20.0 had a breaking change. This PR reverts the version back to 2.19.2. Note the fix is found in the unreleased (at the time of the PR) 2.20.1. Reference: pygments/pygments#3076
This PR also contains a fix to the docs not building due to misspelled library name.
Reviewer Focus
Once pygment 2.20.1 is released, we can change the uv lock to pygment>=2.20.1. This should allow dependabot to bump as normal.
