This is a really interesting topic Sam! Although it has been done plenty of times in the past, I believe you bring new questions to the table (which is good). Here is some advice:

1. Be careful what countries you consider when looking at this question. Luckily, the last Olympics were in Paris (and France is pretty reliable with the numbers officials report on their economic standing). I would recommend doing some preliminary reading on transparency regarding these economic indicators and maybe comparing the numbers you will gather from the World Bank with some local agencies.
2. Multiple studies have also been conducted on the effect of hosting the Fifa World Cup (which will also be happening in the States next year). Maybe you can gather some inspiration on analysis methods or variables from those studies.
3. Have you considered doing a regression analysis? Having all those economic indicators as variables that could predict an outcome Y?
