enh(ci): add installation/uninstallation test for stream-connectors-lib

Description

Adding installation tests for stream-connectors-lib: install the generated package, run a script to test the library and uninstall.
Another PR will be done to add the same tests on stream-connectors packages, but they need this version of the library.
