feat: upgrade mcp sdk to 1.26.0 and add dep overrides#10

Upgrade @modelcontextprotocol/sdk from 1.12.0 to 1.26.0 to get the latest features and bug fixes. Add overrides section to lock specific versions of transitive dependencies including @hono/node-server, ajv, fast-uri, hono, ip-address, path-to-regexp, and qs to ensure consistent dependency resolution across the project.
