The new method of RTDs integration puts all the magic of the sub-module PR support in the sub-module's RTDs project settings. Specifically the new "git checkout command". Thus, after the openamp-docs PR has been merged and all the RTDs projectes have been updated, these files are no longer needed.

The new process will work with or without this PR but it is much cleaner to cleanup the used things so this PR should be mreged after the new process changes are complete.

(There are similar PRs for libmetal and system-reference)

(The supporting PR in openamp-docs has been merged and the The RTDs project has been updated.
This and other PRs should (and do) pass the doc test now.)

We now use the "git checkout command" in the RTDs project settings.
This means we will use the .readthedocs.yaml and conf.py from the
openamp-docs repo and no longer need these files in the submodules.

See openamp-docs/.readthedocs.yaml for details.

I merge this one without a second review because a similar PR was reviewed in libmetal: OpenAMP/libmetal#366
