Note that coqide is still available in nixpkgs for Coq ≥ 8.10. e.g., coqPackages_8_20.coqide. Apart from that, I’ve heard of users of proofgeneral (emacs) and of some plug-in for vs-code.

FWIW https://rocq-prover.org/install gives a list of user interfaces.
