ci(release): drop production redeploy webhook step#16

The release pipeline no longer POSTs to the Portainer/CD redeploy webhook after publishing :latest. Releases now build + publish + prune ghcr only; redeploying production is out of scope for the release workflow. Updates CLAUDE.md and CONTRIBUTING.md to match.
