Add Redis peer host metadata

Summary

• add peer_host extraction for phpredis connection strings that include a scheme
• persist the new peer host tag on connection and command spans
• add integration coverage for the new peer host tag

Notes

• dd_ext_version and JSON request body extraction were already merged into gtrace separately
• this PR only carries the remaining Redis metadata changes from the current work branch
