When I use sign_document function I am getting the following error. Please advise

I think you're using the following crate that depends on the xml_serde.
https://github.com/AS207960/rust-xmlsec

The bug was also described in this issue AS207960/xml-serde#11 and is already fixed. However, a new version of xml_serde needs to be released and the dependency in rust-xmlsec needs to be updated.
