infra: add error monitoring (Sentry)

No error monitoring. Errors go unnoticed until users report.

Tasks:

1. @sentry/react in dashboard (integrate with error boundaries)
2. @sentry/node for SSR
3. Sentry in homepage
4. Consider Sentry PHP for Symfony
5. SENTRY_DSN env var on Railway
