[Projects] Refresh Learning Projects copy (Pupper, ARCTOS, SO101)

Problem

LearningProjects.tsx still uses older marketing-style blurbs. Copy does not reflect current team work (MuJoCo / tuning / locomotion goals, ARCTOS + camera, SO101 teleop + VLA + coffee POC), and the SO101 entry contains a typo ("TThe").

Scope

• Triton Pupper: MuJoCo simulation environments, hyperparameter tuning, progress toward walk / dance / backflips; concise “bridge to humanoid” framing (ML, mechanical, electrical, embedded) without turning the page into an essay.
• ARCTOS: 6-axis printed arm, closed-loop build, camera integration for vision; include link to arctosrobotics.com.
• SO101: Lead/follower teleop, VLA work, tabling coffee POC; tie to imitation-learning / data pipeline for humanoid.
• Align public naming (SO101 vs SIO101) with club convention in this file.

Acceptance Criteria

• Descriptions are accurate, scannable, and use Typography components per docs/typography.md / AGENTS.md.
• npm run lint and npm run typecheck pass.
