Maybe check out how Todoist does it -- you just type in a string like water the plants every three days and it parses "every three days" into the reminder. Likewise, pare down what's required (e.g. projects, job titles, etc.) -- and UI-wise, maybe clearly separate the optional fields from the required ones.
Think about the comparison with a Google Sheets source-tracker: there it takes just typing the relevant fields and tabbing between them. Sourcerer has to be close, if not equal.
