Change the document server from OnlyOffice to Euro-office

I ve tried with the docker compose and it works out of the box by modyfing the volumes path.

Euro-office provide an fork so near iso image of the document server/

Been working with it and created a smaller image for it.

You can use the only office integration, it works just fine.
