Are there any open-source projects using the openstack nio filesystemprovider?

Not that I know of - I wrote it mostly as an experiment to learn more about writing Java Filesystem providers (as there don't appear to be any complete examples). I was going to write it up as a blog post but haven't got round to it.

What do you have in mind?
