Ensure tutorials are compatible with NumPy 2.0

A few of our tutorials may use functions that are no longer supported with NumPy 2.0. Additionally, NumPy 2.0 is required for the earthaccess virtualizarr implementation, and a new environment yaml file will need to be generated, containing the NumPy 2.0 dependency.

Note: older versions of netcdf4-python will cause errors when importing when NumPy 2.0 is installed. Still need to investigate more, but it occurred with netcdf4-python 1.6.2 on OSX.
