Change file I/O (butcher.write and butcher.from_directory) to use pydantic

Hi @mwinokan you should consider using pydantic for this. If you inherit from the BaseModel you get dictionaries and to and from json for free. The other benefit is strict type validation which is enforced when creating the object or assigning an attribute of the class.
