Add support for eprobes

Need support for eprobes (https://www.kernel.org/doc/html/latest/trace/eprobetrace.html) in OneCollect / record-trace scripts for limiting event field emission along with dereferencing fields that are pointers

EProbes don't currently work with perf_events, they only work with ftrace. The suggested workaround is to use tprobes, we can revisit if we find a case where we need eprobe vs tprobe.
