I use the portable version of the program in windows 10.
1- Before downloading playlists or albums, we can't choose what to download and quality. Program downloads everything with Global quality from the settings, forcing me to tweak it very oftenly because I don't want to download every playlist with the same quality, and choosing different quality for different videos in a playlist is not possible.
2- Program creates too many folders. 1 or 2 folder is fine. "GalleryDL" folder and the folder with the websites name are unnecessary. Can you add an option to disable these created folders?
3- Even if there is nothing to restore, starting the program shows "Restoring prvevious session, please wait" text on the bottom.
4- Can we have the option to disable the program showing up on system tray?
5- "Resolution and Quality" doesn't have Instagram.
6- When "Downloading Metadata" finishes with reddit links, program doesn't show the thumbnails.
7- When something is downloaded, "tmp" folder is created at Downloads. Why? Can we disable this?
8- Mouse scrolling is very slow in the settings.
9- Program doesn't remember the size and positioning on the screen after it is closed.
10- Let's say I added 2 different videos, even if I select one of them to highlight it and press "Click to Start Downloads", program downloads both videos. Can you add individual downloading of videos that are added in to the program?
11- Some default settings like "Click to Stop Monitoring" "Click to Download Audio Separately" "Display Link Capture Notifications" should be turned off by default. It took me a while to find these settings to turn off. I think most people would prefer to not have these on.
I would also make Downloads to be the default download location, instead of the Gdownloader's folder.
12- "Restore Previous Session After Restart" should not restore videos that were downloaded. It should restore videos that did not get downloaded.
13- Should I disable "Convert Audio to a Widely Supported Codec (Slow)"? Why is this enabled? Why isn't the program just download youtube videos directly?
I had these problems too but I solved them :
1- This is the biggest problem. I can't choose the location for cookies.txt unlike in many other downloaders. I use the export cookies.txt from Firefox method, I export the file, with Open Video Downloader, I can choose the location of the file, but I can't choose it with this program.

Solution : Adding cookies.txt to Internal folder and editing gallery-dl.conf file so it finds cookies.txt.

Downloading pictures like this https://www.instagram.com/p/DWZmdUFDGnT/ give me Retry Attempt error.
Solution : Downloading galleries with "Right-Click on Copy pasted URL → Download With → Gallery-dl" solved it. This should've been mentioned in the main guide, it took me a long time to figure this, I thought gallery-dl function would be prioritize over yt-dlp but I was wrong.
This is the only gallery-dl gui on github with more than 20 stars for some reason and it's got a lot of features missing.
