How to build paimon trino 476 plugin

I have implemented the new version 478 based on the current project in accordance with the trino connector specification

To do this

• You need to parametrize the paimon and trino versions for this Maven build via property overrides
• It needs access to the Paimon parent pom.xml
• This build needs to be addressed correctly to know where the parent pom is
• You need the appropriate JDK that is compatible with Trino, which is 25 for the newer ones
• You need to fix all of the dependency issues when using a newer version of Trino with this plugin

This would require you to maintain a fork, submit a pr to this repo, or submit a pr to Trino.

My suggestion would be to give up, wait, use a different table format, or create a fork.

This is my understanding from working on building the plugin for a couple of hours.

Overall, Paimon's docs and limited Trino compatibility make it a poor sell if you're relying on using Trino.
