[Chore]: Automated Tests

• Create some unit tests that convert known DDB JSON to Alchemy flavor and then verify each of the fields match expected values
• Maybe create some integration tests that hit the DDB API with a known character URL and test the e2e flow (at least as far as verifying the Alchemy JSON matches expectations).
• Try out vitest for faster test runs and cleaner feedback
