[BUG] Dark Mode Consistency

Describe the bug
Some pages do not correctly display under dark mode (implementation was not complete)

To Reproduce
Steps to reproduce the behavior:

1. Go to /settings, /admin, /admin/volunteer-logs and potentially more

Expected behavior
Dark mode should use the color scheme shown in other parts of the app.
