Document the event schemas in the README.

Context

Tracking issue for the RemitFlow smart contract. Open to contributors.

Acceptance criteria

• Implement the change described above
• Add or update automated tests
• Update the relevant documentation

I prepared a focused README-only branch for this and can open a PR if you want me to proceed:

What it changes:

• Adds an "Event schemas" section to the README.
• Documents the topic tuple, data payload, and trigger for every event emitted by src/events.rs.
• Links to docs/event-reference.md as the canonical full reference.
• Notes the existing test_event_payload_contents coverage for payload-shape verification.

I kept this scoped to README.md and validated through the GitHub Contents/Compare API that all ten current events are represented and that the diff is docs-only. I did not run the Rust test suite in this environment.
