Multiple updates time for same data sources

Hello, maybe this question was already asked in the past, but I'm trying to understand how to manage or document the dataset sources and update times...
for example, in a specific zone (currently working on Tijuana MX), I see from the Overture Maps Explorer that Building datasets comes from OpenStreetMaps, but the source update_time varies from one object to the other..
So, does Overture keeps the latest datasets that are available from the source?

Thats the time it was last updated in OpenStreetMap. https://www.openstreetmap.org/way/473944925#map=17/32.528805/-117.020751

Some datasets that Overture release don't have individual update times, for those the time of ingest is used.

ok, so it reflects from what is being updated from OpenStreetMaps (or any other data source). Also, is there a way to select from which source (for example Buildings could come from another partner like Google, what is the criteria to select one provider vs another one?
