mutter: key stuck issue on window switch, known bug in v4.1.1

Describe the bug

Hello,

I recently switched to Nixpkgs 25.11, and started experiencing the bug mentioned in the title. This bug is confirmed on the GNOME bug tracker (https://gitlab.gnome.org/GNOME/mutter/-/issues/4416). Their proposed solution is, for now, to roll back to mutter v4.1. I propose that nixpkgs does the same. (Though there looks to be a fix that has been merged in the last few days. I don't know when that will become an official mutter version though.)

The last pull request to change the mutter version was #458325.
