Add Rust ecosystem tools

The next generation of Spark/Iceberg tooling is seemingly taking shape in the Rust ecosystem with projects like DataFusion, Comet, iceberg-rust, etc. It's probably worth adding these tools to the Iceberg Matrix site as I'm sure that compatibility with these tools are top of many developers' priority right now.

• Apache Iceberg Rust (https://github.com/apache/iceberg-rust) - A Rust crate that implements Apache Iceberg
• Apache DataFusion Comet (https://github.com/apache/datafusion-comet) - A Rust-based accelerator for Apache Spark using DataFusion and Iceberg Rust

There are also Rust-based REST catalogues such as Lakekeeper (https://github.com/lakekeeper/lakekeeper), which also uses Iceberg Rust.

And several other all-in-one projects that leverage Iceberg Rust and often DataFusion for products:

• Databend - https://github.com/databendlabs/databend
• Sail - https://github.com/lakehq/sail (noted also in this issue Add Sail #8)
• RisingWave - https://github.com/risingwavelabs/risingwave

Given how significant this ecosystem is now, it's worth adding Iceberg Rust to the matrix, possibly with a nod to DataFusion since the versioning is sometimes out of step.

I think I would need to think about adding more things than the compute engines.

It is like adding Iceberg-Java... ( I think is not worthy to add the base that others use) The same can be said about Comet/Velox/Gluten an others.

Can I help on adding Sail? If you have the data I can format it or whatever and then you can do the pull request! ( If not I can try to spend some time on it and then you can review).

For Databend I will look at it ( will open an issue first to see whether some people wants to help.)

RisingWave it is a mix. However as now also processes data... Will add to the list too!.
