Light (day) styling is really bad

Some pages are unreadable (for example, a locked topic) in light mode, and others are just difficult. In general, it needs work. For the time being, can dark mode be the default and the light/dark mode button be hidden?

The locked topic page has improved, but there needs to be some work across all pages in light mode.

Mostly fixed at this point. One place it is still problematic is on the student dashboard page.
