As this stands, if one wants to run multiple OpenSimulator instances (like having two simulators), the configuration files are not separated for the different instances. One would have to modify docker-compose to start both simulator and then have different sets of configuration files.
Maybe this is as easy as adding some documentation on what could be put in the docker-compose file for running multiple instances.
