I don't think there's any Protontricks module that transcribes the currently used APIs calls into something runnable on Linux. It may be feasible to use one of the APIs listed here https://www.ubuntupit.com/best-open-source-speech-recognition-tools-for-linux/ a few of them have windows versions that'll probably work under Proton.
