Add more detailed documentation of tags

Right now, the tags are listed in the POS-specific repos, but how they all come together is not particularly clear. These should just be listed and revamped in a more clear way, for example showing the order, adding reference to Subj and Obj, double checking that everything is there and nothing is out of date, etc.
